What do you mean by security?
Protection against eavesdropping by individuals? Just make sure you connect&authorize with TSL or at least SSL.
Security against governmental access to your mail? Nearly every public provider will hand over all available data about you if asked to by the authorities.
In addition, If you use a no fee provider, they will most likely scan your mail for words so as to find out what they can try to sell you.
The only security you can hope for comes from encrypting your mail traffic, e.g. with GNU Privacy Guard (GPG). It prevents others from reading the content of the mail, but still others can tell to whom you send mail, and when.
On the bright side, GPG puts the name of your OS in the key string. So it shows to others you are using "Linux".
Debian GNU/Linux -- You know you want it.

There is only one foolproof method of preventing Government access to your emails.
Don't send any.
Over here in the UK even encryption doesn't work. You can be sent to prison for refusing to hand over your private key!
If I go
would that be too political?

My new blog. It's probably not as good as I think it is.
