Does anyone know how to get rid of the version and command line information (i.e. the command line that created the iso file) that mkisofs seems to encode near the beginning of the ISO file?

Please provide information as to Linux distribution+version as well as mkisofs version. Also, what do you mean by the version information being encoded in the ISO file?
Sometimes, real fast is almost as good as real time.
