There are the command line options - cdrecord, I think?
For gui apps there's K3b, Arson, X-CDRoast, eToaster, Optimystic, and others.

My personal favorite is K3B, even though my main desktop is Gnome, because it's very convient for burning pretty much anything. It's like a very very improved layout of apps like Roxio and Nero but with the power of Linux behind it.
