Just curious. Maybe I've been spoiled by apt and synaptic, but YaST just seems extraordinarily slow to use....

    Why is YaST so slow?

That because YAST updates its repositories first before you can do any operations. On systems that use apt-get, you update the repo files whenever you want. The openSUSE devs are improving the the packaging tools and TAST/Zypper are supposed to be on par with apt and yum in openSUSE 11.

I was a SuSE user for quite a long time. I moved over about three years ago. Now I prefer apt based package management. At the risk of sounding confrontational, I would say YaST is so slow because its s***. YaST can certainly help point you in the right direction, but I learned not to trust it at all. I could not say how good it is now but it used to break really easily especially when you manually install something from source. This essentially leaves you manually tracking dependencies.
This was not a one off, this happened on about eight or nine separate occasions and was one of many reasons why I moved to another distro/package management system.
