What you're describing sounds like Ubuntu Ultimate edition. You can find the website here.
You might try downloading and burning a fresh copy. They've also released a newer version, if you care to upgrade. (ver. 1.8 -based on Hardy Heron)

Do you mean Ubuntu Ultimate 1.7?
First of all there is 1.8 available.
The installation is very, very simple. On the top left there is an icon that says install. Double click and the installation will begin. It will ask you your timezone, username/password, computer name nad how to use your hard disk. The last is VERY IMPORTANT!
Will you use Linux along with Windows or only Linux?
Let's assume that you have 100GB hard disk. Select manual partioning.
If you want only Linux than make 1 partition of type ext3 with mount point / and give it 20GB. Make 1 more partition of type ext3 with mount point /home and give it 79GB. The last partition should be 1GB of type Linux swap.
If you want Windows too then:
Defrag the hard disk inside windows. Install Linux and during partitioning:
Resize the windows partition to make free space for Linux.
Follow the above guidelines about partition sizes. BE SURE that the format checkbox for windows ntfs partition is NOT checked.
Another option you have is:
Start windows. Insert the DVD and it will show you an installer. Just tell it how much space to use for Linux and username/password and it will install. When you reboot you will have the option of windows or Linux.
But it will be a bit slower than the classic installation.
