I'd recommend spending some time building Linux From Scratch, and/or try building RockLinux:

There are so many distro's out there already, it seems unlikely that you can't find one suited to your individual taste. More likely you will find your time better spent finding a distro that you love and support that. Creating your own distro is very difficult and time consuming.

If you want a more customized distro experience, start with something that give you a solid base and build it up as you like. If you want utter control, go with something like Crux or Gentoo. If you want to have a few things done for you, go with Arch Linux. If you want more automatic handling and configuration of things, go with a minimal Debian install and build on that.

I second reed9's suggestion, coming from Ubuntu Crux/Gentoo/Arch should satisfy your need to get down and dirty with linux.. if after that you still want more you could try LFS. And if even after that you want more.. well then you can try and put a distro together yourself.
