I voted action, but I really can enjoy any genre of game. In not so elitist as to bad mouth the GTA series, I think they are great. But I also love quirky games liek Katamary Damacy.

My top 10 in no order:
Mario 64
Mario Kart Double Dash
Nights
Ninja Gaiden/Ninja Gaiden II
Chrono Trigger
Secret of Mana
Donkey Kong Country
Legend of Zelda: A Link to the Past
Super Mario World
Super Metroid

Now that I look at that list I find it odd that half of them are SNES titles, but I really didn't play SNES stuff as much as NES and N64.

The games I liked best were Deus Ex (the first part) and System Shock 2.
There were unique deep gaming worlds to be explored, nearly always you could decide yourself how to achieve an objective, and the two games sport a genius crossover of action shooters, stealth games, and rpgs. I never felt that the game was "herding" me to do something in a special way.
The gameplay of both was fantastic.
