I've only used Ubuntu Server, but I really liked it. I would be using it on my Dedicated Server if I hadn't obtained a free copy of Win Server via being a student.
Using Linux since June 2007
Distros: Mint 12
SPECS: AMD Atholon 64 X2 5400+, 2GB RAM, GeForce 8800 GTS
When your whole life is on one computer, servers and all, choose stability over anything else.

I am using an Ubuntu server, but I'll probably switch to Debian once Ubuntu Hardy is no longer supported. Simply because when we're talking about the stable release in Debian, we truly mean a stable release.
Ubuntu server is nice, but no longer for me. I want it to be as simple as possible.

Debian doesn't have the support history/cycle that Redhat has. Not sure how half are going for Debian.

Quite simple really, Debian might not have an enterprise supporting it, but it is pretty stable.
Quite often enterprises (not calling any names) call their software stable, but when Debian claims it has a stable release, you can be pretty sure they actually mean it.

Yeah... you have to love software that is tested for stability.
