When I was a teenager the mother of one of my friends introduced my taste buds to marinated skirt steak. She was born in Georgia. My Texas cousin also makes great skirt steak dishes. I was looking at this article this morning as my belly remembered the joy of having all of my teeth and the bliss of briskly chewing on a mouthful of adequately prepared skirt steak! Ok, Roky!! The food in the link looks real good. There is a whole section of Staten Island called Port Richmond
where there are lots of people from Central America. I'm going to make it a point later this month to locate

Here in Monterrey ,in northern Mexico we call it Arrachera, and we like it a lot. A few years ago (about 20) in central Mexico i saw it sold as cat food as nobody wanted it, poor fools!, now they know better.

Love beef fajitas from my local Mexican food joint. A new one went in recently which has lingua (tongue) fajitas, also great.
