I only used two until recently, as bigtomrodney said,
now even moreso since using Compiz/Beryl

Well, I have 2 monitors, and 4 desktops on each running fluxbox.
So not sure where my vote should go, but ill put it on 4, as I would use 4 if I had 1 monitor.
Check out Tilda, terminal emulator, it might not work for you. Its one of those things that you just like or dont.

4 for me.
The first is always filled with about five or six open office documents because I usually have a few pieces I'm working on and I have to have a few different documents with research for the various pieces.
The second desktop is always reserved for firefox and thunderbird.
Number three is for the terminal and any editors, while the fourth is strictly for Amarok.
It might seem excessive but it actually greatly facilitates my productivity. Since I keep them straight in my head like "1. Work. 2. Internet. 3. System Management. 4. Media" I can always keep track of where stuff is. It also helps me because I can do work solidly in desktop one without getting too distracted by internet, news, email. Of course, sometimes I break the system, like when I'm using the internet for research purposes.
My favorite thing about KDE is having the taskbar at the bottom only display applications for the current desktop. This stuff is all great and using other OSs just annoys me to no end now that I'm used to this system.

As I mentioned before I use four (or more if necessary).
I feel that it makes me more productive.
1. Firefox (or Web Browsing): I always like to have a full screen browser (I love the tabbed browsing).
2. Gaim (and Instant Messaging): I find myself switching between the internet and IM's a lot, so it's easier to have one on one desktop and the other on a different.
3 and 4. Calendar or Open Office activity. Usually 3 for Calendar and 4 for OpenOffice.org.
Extras. Just incase there are too many applications.
For music I use rhythm box which conveniently (like amarok) can be hidden in the notification area. I only open music applications if necessary.
