From my little experience, CentOS/RH/SL are one of the more popular distros for servers. Though I still have to learn how to set-up my own server, I am inclined to use any of these three.
RHEL and derivative distros. Debian is also very good.
I voted Red Hat despite a preference for Debian as RHEL (or re-brand such as CentOS) seems to be the most commonly used commercially.
Debian. Running it for last five years, no problem at all.
I'd say Gentoo. Total customization.
For work/Prod - RHEL
For work/Dev - RHEL/CentOS
For home (media server, etc.) - Fedora
I'll vote Debian.
But Slackware is a very close second.
Either way... supreme stability, and a great level of customization.
I reckon RHEL and any of it derivatives/ clones are probably best. But i think Debian or Slackware wouldn't be far behind.
You could run a Ubuntu server using the server kernel or downloading the Ubuntu Server Distro; which has no GUI, so that also would provide ample opportunities.
