As far as I know, Ubuntu doesn't have an unstable version.

Well, Ubuntu is built on Debian Sid (unstable brach), so I'm not sure how stable it's going to be. I'm sure it's stable enough as a workstation/desktop but I wouldn't trust it as a server or anything that needs maximized uptime. I used it for a short while (maybe 1 or 2 months) and it worked well.

The present "stable" version is 5.04 (Hoary).

You can probably use Breezy sources now if you want to know what Breezy is going to be like (kind of like running unstable).

My advice would be to just install Hoary and use the Ubuntu Guide. If you decide you like Ubuntu and want to stick with it, you can always dist-upgrade when Breezy's officially released.
I'm using Breezy Ubuntu and Breezy Kubuntu right now, and it's basically okay, but I wouldn't recommend it to someone trying Ubuntu for the first time. Stick with Hoary.

Breezy isn't in full realease yet if i'm correct. I would stick with Hoary. . . 5.4.
And Kubuntu is better
