I just installed Ubuntu 5.10 on a vaio laptop. I got fluxbox up and running as default - so my wm boots quickly - but ubuntu takes 2-3 mins to boot. Where do I go to see whats booting and turn off some things?

My Debian 3.1 Sarge stable needs 30-40secs to start up completely....
I think there is something wrong with your configuration.
For example, if you've configured your system to get network addresses via a dhcp server,
this can take a lot of time to search for a server at startup if you are in an network without dhcp or without a network connection.
Can you see the messages of the system while booting or can you only see the "ubuntu bootscreen" ???

I think I found the problem, it freezes for about 2 minutes on the "starting network interfaces."
I have two networks activated: eth0 is wired and eth1 is wireless. I use each frequently depending on where I am so I don't want to deactivate either of them. Am I s.o.l.?10" Sony Vaio SRX99P 850MHz P3-M 256MB RAM 20GB HD : ArchLinux

Try booting with the "safe graphics mode". That worked for me.
