Ubuntu does have newer software and is more userfriendly, while sarge is more stable and more diy. You have to choose what is more important to you.

If you want newer software, why not consider upgrading to Etch or Sid?

Debian always has three stages (unstable, testing, and stable) At the moment Sid is "unstable", Etch is "testing" and Sarge is "stable". In the next few months Etch will become "stable" meaning that Sid will then become "testing" and a new name (I cant remember what it was) will become "unstable".
I would definitely go with Etch as it is really close to the "stable" stage.

I ran Sid once and had a few problems. I now run Etch and have had nothing but good fortunes. The only problem I had was installing Flash 9 which was still the beta version in the repos (this was after 9 final had been released). The beta version wasn't on the Adobe website anymore so flashplugin-nonfree didn't work. This was fixed a few days later.
