You should be able to adjust the size of icons at:
System / Preferences / File Management / Viewsoz

In that case, try opening Nautilus, then: Edit / Preferences / Views

Search for nautilus gives me a long list of files, how do I open it?

open Nautilus
select Edit
select Preferences
select Viewsoz

Open Nautilus where and how? All I have is a long list of nautilus files in the directory.

You should find Nautilus in the apps menu and maybe in one of the panels running across the screen. It might show up there only as "file manager". Once opened, you should have some menu options running across the top of the Nautilus window, once of which will be "Edit". From there, you should be able to follow the path outlined above to reach the configuration window where you can adjust icon size and other configs.

Software centre shows that Nautilus is installed but it does not show anywhere in the menus, not in applications or anywhere else. I just find an endlessly long list of files when I search "Nautilus" but I have no idea which one (or ones) to use to get the program opened or to put it on the desktop.

I'm not running Ubuntu, so can't say what they've might have done to it to change it, but it should look something like the older version of Nautilus in this screenshot:
