Exiting the X server is simple. Just exit all programs running on it or, less preferrably, press Ctrl+Alt+BkSpc. However, if you're running in runlevel 5, gdm will automagically restart the X server for you. Run "telinit 3" as root to enter runlevel 3 instead, where gdm isn't running.
But on the other hand, you probably won't need to. Just press Ctrl+Alt+F1 to go directly to a text mode terminal without exiting the X server.
