There are several methods to do that. First, you can manage the symlinks manually. It's all in /etc/rc.d/rc?.d. Then there are several GUI/TUI programs to do just that, but I've never used any of them, so I can't really tell you much about them. One of them is called serviceconf, see if you have that one.
To uninstall programs, use the command "rpm -e packagename". It requires you to know the name of the package.
