Dear e-freak,
if you use Gnome all you need to do to create an icon for Enemy Territory is right click on one of your panels and go to "add to panel > custom application launcher"

inside there set:
Type: application
Name: Enemy Territory
Command: <browse to your enemy-territory folder and click on et>
Comment: I enjoy cheese

you can even get the et.xpm from the enemy-territory folder and set it as the launcher's icon.
