my portage folder is huge why does it grow larger and how do i clean out all that stuff?

because all the source tarballs are stored in /usr/portage/distfiles
you can safely remove all the tarballs in distifiles but any minor updates or switches in gcc and the such will result in having to download all of them again but if you have broadband its no big deal.
you can also check out eclean a portage tool for removing obsolete packages

I usually just went through and deleted stuff by hand, but eclean looks pretty cool, I'll have to try it.
