Alright - quick question... In SuSE 8.1 -- if I was to select a minimal installation... compile my own kernel... and then begin installing packages with YaST... would that ellminate the CRAP that I don't need like KDE and GNOME?

I dont know about suse as i haven't tried it. But the others i've tried, thats the way it worked....
