What version of Redhat should I install.

There are no "lite" versions AFAIK, just grab yourself a copy of Redhat 9 or Fedora and install it with the options you want --- Ensure you install "Development Tools" or you will have problems installing new software!!

once you have Linux installed, have a look at the Services setup (this is which services are started at boot up). You can probably get rid of sendmail and I don't ever bother with atd.
These little ways can be used to en-"lite"-en your Linux

Use Suse 10.1 and occasionally play with Kubuntu
Also have Windows 98SE and BeOS
