x windows not accepting graphics card
I'm using a nvidia GeForce2 GO but my redhat 7.0 installation disks only recognize Nvidia: GeForce 2, GeForce DDR, GeForce 256, Riva 128, Riva TNT, and Riva TNT2. Which one of these should I select for usage since my card isn't on the list. I tried GeForce 2 but when I booted the computer it told me that it couldn't find the graphics card and the x wouldn't start.

In that case, I'd recommend you to first install a more general graphics driver, such as the VESA driver, and then update with nVidia's drivers.
