So I downloaded the ISOs:
install-x86-universal-2004.0.iso
packages-i686-2004.0.iso
Created the CDs...but it won't boot properly and keeps freezing on the install portion....

Gentoo not a happy camper

What do you mean "it freezes" on the installation? Gentoo installation is not automated. It should give you a command prompt. Fromt here you can install the system following the gentoo install documentation:
