Installing for two adjacent screens
I would like my screens set up in such a way that they use one session and as if the screens are one: mouse moves from the left screen to the right screen and vice versa. What are the settings to use and, more importantly, what is this called?

If your video card supports it (most recent NVIDIA cards do), the best way to do that is by using twinview.
If you have some other cards, the way to do it is by using xinerama.
