Arch, Crux, Debian, and Gentoo all allow for a minimal base system installs. Then you install only those apps that you really need or want after that.

My advice... Google "Perfect <Insert Linux OS> Desktop"
Most of the time, there are several sites with nice intro's to each system on installing programs that you may need/use. Be selective, if you don't want all that they suggest.
