From what I understand, Sabayon uses a forked version of the Andaconda installer which is what RedHat and Fedora use. So I think it would be possible to use kickstart to automate Sabayon Linux installs, but I was curious if anyone knew for sure.

Not sure. I installed and used Sabayon for awhile a few years ago as an experiment, but then I moved to CentOS and finally Scientific Linux, which is what I use now at home. At work, I use a Nokia-enhanced & licensed version of RHEL.
It seems to work, its just a little different but for the most part it is the same.
