I have a BFG 8800 GTS 512 mb video card. When I try to live boot or install linux, it finishes the boot up process then my monitor just turns off. I feel that it is not picking up my video card. Can anyone please advise?

I'm sure its more then that. But where/how am I going to type that in if I am unable to boot up to a gui or command line?
I know nothing about sabayon, but it could be acpi related.
When you insert the cdrom, you should get a boot menu or something, and a line starting with "boot: ". If you can't see that, look if there's a banner telling you to press F<something> to enter some kind of expert mode.
In any case, if you can see the "boot: " prompt, write this, and then press enter to boot:

There you can see some more parameters and maybe some instructions to work around faulty hardware. If your problem can't be circunvented this way, you should post to the sabayon forums, because you will have a bigger chance to get a good answer there.
