    what does a kernel patch mean

    It means patching/updating the kernel source with so-called patch files. They have *.diff endings IMHO and are ASCII.

    They usually have "+" and/or "-" at the beginning of each line.

    "man patch" explains the process.

    It is relatively complicated to generate those patch file, well not for those who once grasped it, but applying a patch is quite simple.
