Well, the Ubuntu LiveCD is just like the Ubuntu install CD except that it runs off the CD. Knoppix on the other hand is a more complete LiveCD with 2GB of files crammed onto a CD. Ubuntu and Knoppix will perform much better when they are installed onto the hard drive. If you just want a LiveCD, go with Knoppix because it is more complete. If you want to eventually go with a hard drive install, you can choose either. I believe you can install Knoppix to the disk using the LiveCD but Ubuntu requires the install CD (as far as I know).
