Been a while since I've done a hard-drive install of knoppix, but I think you just open a terminal and type as root. Yes it's perfectly legal. The DE for Knoppix is KDE, but there is a derivitave work named Gnoppix that uses Gnome; there may be others with other DEs, but I haven't been really looking into that lately. I know that there are a LOT of live CDs that use other window managers/desktop environments, but I don't know about Knoppix variants.
