What exactly do you mean "basic maintenace to perform on a system to keep it going".

Okay, you are still pretty vague but I can give a couple of pointers:
- Use your package manager for installing programs - you will then have easy access to managing the installed programs.
- Delete what you don't need in your /home/<user> directory or it will get cluttered quickly (trust me, it happens)
- Uninstall what you don't need

That's all I can think of now but I'm sure others will post something.

Are you referring to stuff like Disk Defragmenter and an AV like you would use in Windows?

Defragmenter=Not necessary, disk does not get fragmented enough to make a difference in Linux.
AV=Again, not necessary. Unless you are using Linux in a business environment. Then you could check out Clam AV or F-Prot.

But for most Linux systems, the only "maintenance" that needs to be done is to keep your packages up-to-date.
You are using Knoppix which has "Apt-get.
So you can just do as root in a terminal.
apt-get update
apt-get dist-upgrade

That will update all of the packages on your system.
