Im not sure if there is a way to disable only roots. Make everyone start it text mode and then if you want them to have a GUI tell them to type startx. Fairly simple and not a log of leg work to do

You could just enable kdm, gdm or xdm.
Then the regular user will log into gui by default.
By default with those display managers, root login to gui is not allowed.
Must hit Ctrl + alt + F1-6 in or open up a terminal and su into root.How to know if you are a geek.

At your login screen click on session down at the bottom and choose the one you want. Then it will start up that one everytime you boot the computer
