Just run it live with persistence. I did that with Ubuntu 11.10 to test it out to see what the fuss was about. It will save changes like a install and not take up as much room as a full install. You won't get much save space on a 2gig drive though. I think Ubuntu (CD download, not DVD) left me about 600MB on a 2 gig pendrive with persistence. I blew it away later though. Was not my cup of tea.

When you begin the installation of Linux Mint 12 and get to the Preparing to Install Linux Mint screen, it will tell you that 3.5GB are needed.
Depends on the desktop version you use.
