Many Nokia phones as modems are supported directly by NetworkManager. If you've got that installed and running for wireless support, it should be possible to just plug-in your USB cable, give it a few seconds then right-click on your NetworkManager icon and select the GSM network.
I'm not familiar with the E51 phone, but it works with my old N70 and with my slightly newer E61.Linux user #126863 - see http://linuxcounter.net/

I am using a nokia E51 and can connect via usb and use it for 3g connectivity. Works out of the box with network manager on ubuntu, debian and fedora 11 (those are the ones i have tried it on) so it should work with your setup no problem.
Plug and play baby!
