    Would it just be easier to install the desktop version? I'm downloading it now, I just can't believe I was stupid enough to not notice I got Server last time

    Installation Process of both versions is same.
    Ubuntu Server is Ubuntu Desktop version ( Without X Server ) + Server Packages.
    It is amazing what you can accomplish if you do not care who gets the credit.

    Not really but If you are not planning to run any Server then I would suggest you to install Ubuntu Desktop only.
    It is amazing what you can accomplish if you do not care who gets the credit.

    Preferably get the Alternate disk and use the Text install

    Well the Desktop version is working very wellexcept when I try to install anything (in this case a modem). Everytime I try, I get an error message saying there is: No application suitable for automatic installation is available for handling this kind of file.

    What do I do?

    I echo that. What package(s) are you trying to install EXACTLY? Where are you downloading it (them) from?
