For web servers, I suggest Fedora Core 7 or something. For Mail Server, try Slackware Server edition.

RHEL/CentOS, Debian, Slackware, Ubuntu, Gentoo, Arch, or even.... a BSD instead?
Any of the above / YMMV.
If you're really new to Linux you should not be running a web server or a mail server that is open to the web. Hit the books and learn how to configure and harden these services first.
