I would personally recommend Arch Linux:
-Doesn't come with X or any sort of GUI
-Easy and fast to download and install thousands of software packages using the pacman package manager
-Highly documented system, with one of the most comprehensive wiki's
-Great, helpful community
-Uses BSD scripting methods. All major system configuration stored in single 'rc.conf'
-Minimalistic and snappy
Read more at their website! Most importantly, have fun

My pleasure. They have an excellent beginners guide for setting up your Arch system if you feel you've lost your way during the installation.
Enjoy!
