Guide to Setting Up Mail Server

Okay, so I want to set up a mail server in an intranet like environment and for the webmail interface I'd like to use RoundCube. Can someone point me to a mentally challenged person's guide to this or something?

I've managed to set up apache, mysql and php fine and even get wordpress running but it seems a mailserver is a little too far out of my reach. It seems the guides that I've generally been reading miss out on key information that I try to patch together elsewhere but anyways.

Some information about the environment:

VM machine with free DDNS service by DYNDNS.
Fresh CentOS 6 with minimal install
