You don't install Gentoo WITH a kernel. You emerge a kernel via portage. I.E.
    Code:
    emerge gentoo-dev-sources
This would fetch the kernel source for the 2.6.5 kernel (at the time of this writing ; } You then configure the kernel and install it.
With Gentoo you get what you want. Go ahead, download and burn the .iso, Gentoo is great.

well, i have installed gentoo once and followed all of the steps and it installed with kernel 2.4...but i think i might have used a preset portage or something

so when installing at what point would i type that? while in the configuring the kernel section maybe? thanks

Emerge <kernel-sources> would come after your base system has been built.

run emerge sync if you havent allready done that then if you look in this directory:

    ls /usr/portage/sys-kernel/gentoo-dev-sources/

you will find lots of ebuilds available. you can emerge the one you want with:

    emerge -av /usr/portage/sys-kernel/gentoo-dev-sources/gentoo-dev-sources-2.6.4.ebuild
