Is there any reason you don't want to just put LaTeX on an already-installed distro? Any distro can install it quite easily.

Yeah, that would work. But at this point I'm not sure how to do that so it would just be easier if it came with the distro.

Well, a quick look at DistroWatch doesn't turn up much help. They don't track LaTeX specifically (as far as which distros carry it in the default install); they do track LyX, which is a document processor that uses LaTeX (and thus would require LaTeX to be installed), but LyX isn't in the default install of any of the major general-purpose distros that people would normally recommend.
With most distros, you have the option during install to look at a detailed package list and hand-pick what programs you want. So I still recommend going with one of the recommended general-purpose distros (SuSE, Mandriva, Ubuntu/Kubuntu, Fedora, Mepis) and making sure LaTeX gets installed. Even if you miss the option to pick it during the initial OS installation, it's extremely easy to find it in a package manager and add it to the running OS.Stand up and be counted as a Linux user!
