"Easy" is not an easy question to answer because what one person finds easy, another person finds extremely difficult. I think you'll probably have to experiment some and decide for yourself which one(s) you find easy.
That said, lots of folks consider ubuntu, suse, mandriva, and fedora (along with a few others) as easy.oz

try LIVE CD/DVD version of some of the distros by which you can pick your best

Installation Procedure of all Linux distros is almost same. if you are dual booting then you have to take care of few things and if you are going to install Linux in blank harddisk, you dont have to do anything. insert installation CD/DVD and installer will guide you.
It is amazing what you can accomplish if you do not care who gets the credit.

I suggest Ubuntu, but if you want to partition your hard drive (to keep Windows), then you should look at a tutorial. Otherwise it is pretty straightforward if you have CD burning software (anything but the one that comes with Windows, there are some free ones on the internet).
