If Partitions are Mounted, GParted will not let you do anything. Boot up from Ubuntu CD and resize partition. Ubuntu CD doesn't mount partition automatically.
in case it doesn't work, Post the output of 'sudo fdisk -l' command here.It is amazing what you can accomplish if you do not care who gets the credit.

I figured out how to make the partitions, and they show up in the Ubuntu installer, but now I get an error saying:
No root file system is detected
Please correct this from the partitioning menu. How do I fix this?

Select Partition and select / from Mount Point list to assign root ( / ) mount point to that Partition.
It is amazing what you can accomplish if you do not care who gets the credit.

Do i do that in Gparted?

No. GParted is Partition Manager only and you can not assign mount points through it.
Create Partition with GParted, format it in ext3 FileSystem. Start Installation and select ext3 partition. Assign / mount point to the partition. It is amazing what you can accomplish if you do not care who gets the credit.
