Most of the time this works with livecds:
sudo passwd su
or
passwd su
to set the password for SU....

If LiveCD comes with predefined password then there is no way to reset it unless you know the actual password.
It is amazing what you can accomplish if you do not care who gets the credit.

I have used LiveCDs of all those distros and none of LiveCD has predefined root password. Enter key worked in all those.
IIRC, earlier version of Gentoo LiveCD had predefined password and hitting Enter key or assigning new password didn't work. I had to search for Gentoo password that time. I will check Gentoo LiveCD in my CD Stack again and let you know version and exact password. I am 100% sure that assigning new didn't work. I had to Google for that.It is amazing what you can accomplish if you do not care who gets the credit.
