The answer to which is best always is, "It depends...."
Are you looking for paid support? If so, the most popular option is probably RHEL, followed by Suse Enterprise and Ubuntu Server.
If not, the most popular are probably CentOS (RHEL clone), though I recommend Scientific Linux (also a RHEL clone and the Large Hadron Collider folks use it), or Debian Stable.

As reed9 mentioned already, it depends on your prefrence only.
I prefer Debian Stable over others.
there are a lot of good distros for servers many of them are live cd so you can check them out. but it still comes down to personal choice. all the server distros provide the same basic functions but you choice would depend on what you want (for example text based or gui or hardened, ect.)
research the distros online by going to their websites.
you can also set up some other distros as servers as installation gives you the choice of setting up as server
I have set up pclinuxos as a server distro on my dell poweredge 2800 and it works great!

There isn't a server distribution that is the best for everyone so the only way to find out which one is best for you and your hardware is to do some testing of your own. Otherwise, you can only get varied opinions from users about what they like, and with that method you'll get a huge mix of suggestions that might only make your decision more complicated. I'd recommend trying at least a couple of those listed in the favorite server poll suggested above by devils casper.
