I noticed a directory was renamed a few weeks ago; are these activities recorded on a log file and where can I see / find this?

Not as far as I know.
You can try greping through the .bash_history files in the users home directories though, you never know you might turn something up.RHCE #100-015-395

You could check the owner/privileges of the file to see who it possibly was although both these things could have been changed so it isn't definite.
You could get an idea of whose .bash_history to look at first though as in matonb's suggestionLinux User #453176

This level of activity monitoring is not enabled in the system by default, but it can be. Some types of monitoring are only available if you have enabled SELinux functionality in the system, in which case not only are more stringent access rules applied, but more logging options are available for system auditing purposes.
Sometimes, real fast is almost as good as real time.
