I'm running Centos 5.6 on a new server, the server has a built in 8 bay JBOD. Since each bay will have a different address to UDEV, I want to give each bay its own unique /dev/ file. Any help is greatly appreciated.

You may want to look into the UDEV rules documentation/examples.
The rules are stored in /etc/udev/rules.d. I know it's possiible with disk devices as many years ago, I used it to have my SD card map to /dev/sdcard/<partition number> though cant remember how to do it off the top of my head."I am not an alcoholic, alcoholics go to meetings"
