How can I update locally, from RH ES 3 Update 5 to Update 9

Due to Oracle app/database certifications, I need to figure out how I can go from Red Hat ES 3 Update 5, to RH ES 3 Update 9. If I do the RHN update, it will get packages newer than what is on Update 9. I need to go to update 9 level only.

I've found a few documents on how to set up Yum to use a local repository. I'm copying the base and RPMS directories off my Update 9 CD's now to a local repository directory on my server.

I can't find any clear step by step instructions on how to configure yum though.

Is there an easy way to do this? I was hoping maybe up2date going to my RHN subscription, there was a way to have it just use the Update 9 channel.
