Check this poll for favorite server distribution.

I plan on doing the same, and will currently use OpenSUSE 10.3 x32. Load Webmin to administer MySQL, Apache, and the system in general via a web interface from another PC. If you want to administer it from a Windows box, load PuTTY and WinSCP on the Windows box.

    The web root is /srv/www/htdocs

Piece of cake. You can add host headers in the Apache config to make things like server.host.com (make sure you edit your dns server as well).
    I praise Webmin and PuTTy!

I used Debian Linux with Apache/MySQL/PHP/Tomcat(JSP) Postfix Mail and VSFTP server I host about 3-4 and it runs like a dream..

Also monitoring and quick maintenance is easy with webmin, it does n't even used 50% cpu!
