I plan on doing the same, and will currently use OpenSUSE 10.3 x32. Load Webmin to administer MySQL, Apache, and the system in general via a web interface from another PC. If you want to administer it from a Windows box, load PuTTY and WinSCP on the Windows box.
The web root is /srv/www/htdocs
Piece of cake. You can add host headers in the Apache config to make things like server.host.com (make sure you edit your dns server as well).I praise Webmin and PuTTy!

I used Debian Linux with Apache/MySQL/PHP/Tomcat(JSP) Postfix Mail and VSFTP server I host about 3-4 and it runs like a dream..
Also monitoring and quick maintenance is easy with webmin, it does n't even used 50% cpu!
