I should be possible somehow... maybe some VPN or ssh tunnel? if you know the IP of the machine you're connecting to and there's no firewall/proxy it should be quite easy. Not sure how to set it up though, I'd look/google for an tutorial on ssh.

Yes, a VPN would do what you need. However, please be aware that a VPN will only encrypt your data to that one server. All other traffic on your wireless network would be sniffable.
