You can use Ubuntu or Debian for your iMac. What do you need to know specifically?

install: if ur only going to need it for a server the i suggest a bare install of debian. try the netinstall (go to www.debian.org and follow instructions for the netinstall). to get started with the server refer to www.aboutdebian.com/internet.htm (very helpful to me!).
hardware: not really. you may want to google web server security, and maybe get a program to help you out with the security (a firewall is an example).

Should you decide to stick with Ubuntu, there is an option during the initial splash screen of the installtion to install Ubuntu for a server.
